Why Oolong
Oolong is Taiwan’s signature tea and the foundation of many high-end bubble tea shops. It offers a complexity that black and green teas don’t — a natural creamy, floral character that makes it exceptional for cheese foam teas, taro drinks, and premium milk teas.
Best varieties for bubble tea:
- Jin Xuan (金萱) — naturally milky, creamy sweetness with floral notes. No milk needed to taste rich. Taiwan’s most famous oolong for bubble tea.
- Four Seasons Oolong (四季春) — floral, slightly grassy, clean finish. Versatile base for both fruit and milk teas.
- Dong Ding (凍頂) — roasted, nutty, amber colour. Pairs beautifully with brown sugar and darker flavours.
Method
- Heat water to 85–90°C — hotter than green tea, cooler than black tea. This range extracts oolong’s floral compounds without bitterness.
- Measure tea — 18g per 1000ml. Oolong leaves are larger and need slightly more volume than black tea.
- Steep for 3–4 minutes. Jin Xuan can steep up to 5 minutes for a stronger flavour profile. Four Seasons should not exceed 4 minutes.
- Strain and cool to room temperature before refrigerating.
- Store refrigerated for up to 24 hours.
Commercial Tips
- Oolong is a premium positioning tool — consider a dedicated “Oolong Series” menu section to justify higher pricing.
- Jin Xuan oolong paired with cheese foam is one of Taiwan’s best-selling drink combinations. The natural creaminess of the tea matches the salty foam perfectly.
- For taro milk tea: oolong base creates a more complex, layered flavour compared to black tea base. A natural menu upgrade for discerning customers.
- Oolong is more forgiving than green tea — minor temperature or timing variations won’t ruin the cup.
